Pork Tenderloin Barbecue Sammies

Do ya'll remember that pan seared pork tenderloin we made earlier in the week? Well here is a great way to use up leftovers. You can substitute any leftover meat for the pork tenderloin. This is a quick tasty meal you can serve your family and in the end those leftovers did not sit in the fridge in vain!

Here is what you'll need:
  • leftover pork tenderloin sliced thin (or whatever meat you have leftover)
  • 1/2 cup of your favorite BBQ sauce
  • 1/3 cup apple juice
  • 1/3 cup onion chopped
  • 1 tbs garlic minced
  • 1 tbs olive oil
  • few dashes of hot sauce (optional)
  • 4 bun ( I use a multigrain bun)
Lets get to makin' these sammies!
  1. sautee onion and garlic in olive oil until translucent and aromatic.

  1. add BBQ sauce, apple juice and hot sauce and reduce heat to a low simmer

  1. add meat and heat through. I like to break up the meat as it simmers you don't have to do that 
  2. heat though and serve on toasted buns and serve!
